Cauliflower With Vinegar Sauce

1 each onion, chopped
2 each garlic cloves finely chopped
1 cup green bell pepper, chopped
1 1/2 teaspoon olive oil
3 1/2 cup cauliflower florets
3 tablespoon vegetable stock
3 tablespoon white wine vinegar
2 teaspoon paprika
1 teaspoon cumin, ground
1/4 teaspoon salt

Saute the onion, garlic & bell pepper in oil for 3 minutes. They should all be slightly softened. Add the rest of the ingredients, cover & simmer until the cauliflower is tender, no longer than 10 minutes. Ser e immediately. "Vegetarian Gourmet, Special Low-Fat Issue" 1995
