Chived Mashed Potatoes
appetizers, microwave, vegetables, cheese/eggs
1 1/2 cup hot water
1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoon butter or margarine
1/2 cup milk or light cream
1 1/2 cup instant mashed potato flakes
1/3 cup sour cream
1/4 cup finely chopped parsley
3 tablespoon freeze-dried chives
1 egg, slightly beaten
1. Combine water, salt, pepper and butter in a deep, 1 1/2-quart heat-resistant, non-metallic casserole. 2. Heat uncovered, in Microwave Oven 4 minutes or until mixture boils. 3. Add milk. 4. Stir in potato flakes with a fork. 5. Stir in remaining ingredients until well blended. 6. Heat uncovered, in Microwave Oven 3 minutes or until heated through.
