Blue Corn Casserole
breads, casseroles, cheese/eggs
1 teaspoon vegetable oil
3 1/2 cup blue cornmeal
1 medium onion; chopped
1 teaspoon baking powder
2 cup pinto beans; cooked; drained
2 teaspoon cumin
1 cup tomato sauce
2 teaspoon chili powder
2 1/2 cup cheese; grated or tofu water
1/2 cup green onions; chopped
1 egg or egg sub.; beaten
1 picante sauce
1 cup chopped green chilies
