Onion Relish

2 lb sweet onions, lg. -chopped
2 celery stalks -sliced
1 sweet red pepper -chopped
1 tablespoon butter -melted
3/4 cup vinegar, cider water
2 tablespoon brown sugar
1 teaspoon celery seeds
1/4 teaspoon salt

Saute cnion, celery, and red pepper in butter in a small Dutch oven 1 minutes or until tender. Add vinegar and remaining ingredients. Bring boil; reduce heat, and simmer, uncovered, 20 minutes. Store in refrigerator. Serve chilled or at room temperature. Yield: 1-quart
