Pork Roast Salsa
relishes, sauces
1 small can pineapple rings; drained
2 tablespoon red bell pepper; diced
3 green onions; sliced fine lengthwise
1/4 teaspoon ground ginger
1 oz lemon juice
1 oz tequila
1 tablespoon fresh mint leaves; chopped
Cut pineapple rings into 1/4-inch pieces. Mix with all other ingredients. Chill very well. Serve with pork roast.
Judi's Notes: This tastes so much better with fresh pineapple. I added a fresh peach to it and it turned out very well.
