Parkin
cakes
1/2 kg oatmeal, fine
2 teaspoon baking powder
120 gm lard
2 teaspoon ginger, ground
1 teaspoon mixed spice
250 gm golden syrup
Rub the lard into the oatmeal and mix in the spices and baking powder. Warm the syrup and mix it into the oatmeal till you have a stiff mixture.
Grease a flat baking tin, pour in the parkin and bake for 1 to 1 1/4 hours at 300F, gas mark 2
