Key Lime Pie

----FOR THE CRUST----
2 cup graham cracker crumbs
2 tablespoon sugar
1/2 cup (1 stick) butter [melted
1 & cooled]
----FOR THE FILLING----
8 oz cream cheese [softened]
15 oz sweetened condensed milk
1/3 cup key lime juice
1/8 teaspoon lime oil (optional but good]
1 cup sour cream

To prepare the crust... 1) Combine all of the crust ingredients and press into a 9" pie pan or spring form pan. Bake @ 350o for about 20 min. or `til nicely golden brown, then set aside to cool... To make the filling... 2) In a medium size bowl, thoroughly mix together the cream cheese and the milk, then blend in the Key lime juice and lime oil (if used)... 3) Beat in the sour cream and mix `til smooth, pour into the prepared crust and refrigerate for at least 2 hours before serving...
