Chocolate Madeleines - House Beautiful

1 cooking oil spray
5 oz semisweet chocolate
3 tablespoon low-fat milk
1 cup whole wheat pastry flour
1 cup all-purpose flour
2 teaspoon baking soda
1 1/2 cup cold strong coffee
1/2 cup madeira
2 tablespoon unsalted butter
1 cup sugar
3 medium eggs
Spray 60 Madeleine molds with cooking spray.
In a small saucepan melt chocolate in milk and set aside.
In a medium mixing bowl, mix together flours and baking soda and set aside.
In a small bowl mix coffee and Madeira and set aside.
In a large mixing bowl cream butter and sugar together. Add eggs one at a time, beat- ing well after each addition. Beat in flour mixture in thirds alternately with the coffee mixture.
Spoon 1 T batter into each prepared Madeleine mold, and bake in a preheated 350'F oven for 10 to 15 minutes. House Beautiful/September/93 Scanned & fixed by DP & GG
