Peach Dessert "salsa"

2 each peaches; ripe
1/3 cup coconut; grated
1/3 cup golden raisins -or- dried cherries
2 tablespoon orange juice concentrate-or-
2 tablespoon grand marnier liqueur
1 tablespoon mint, fresh; chopped
"...perfect served over ice cream, sherbet, toasted pound cake or yougrt cheese."
Cut peaches in half and remove pits. Dice. Combine all ingredients. Let stand 1/2 hour before serving. MAKES: about 2 CUPS
