Carrot Cake -

2 1/2 cup flour
2 cup sugar
1 1/4 cup oil
1/3 cup milk
2 teaspoon cinnamon
1/2 teaspoon salt (optional)
4 single eggs
3 cup carrots; finely grated (6)
1 cup walnuts; chopped
325 degree oven. Grease 10 in. tube pan in a large bowl measure first 9 ingredients with mixer at low speed. Increase to high speed and mix for 5 min., scrape bowl. Stir in carrots and nuts. Pour into pan. Bake 1 hr 10 min. then remove from pan ~--
