Fresh Apple Muffins

2 tablespoon soft margarine
2 tablespoon sugar replacement
1 egg (beaten)
1 1/4 cup flour
1/4 teaspoon salt
2 teaspoon baking powder
6 tablespoon skim milk
1 apple (peeled and chopped)

Cream margarine and sugar replacement; add egg. Stir in remaining ingredients. Spoon into greased muffin tins, filling no more than two-thirds full. Bake at 400øF for 25 minutes, or until done. For those who like spices, you may add cinnamon, nutmeg, ginger, cloves to the mix - just a dash of each. Yield: 12 muffins PER SERVING (1 Muffin): Calories: 72 Exchanges: 1 bread
