Hearty Bean Soup
beans, diabetic, lowfat, main dish, soups/stews
2 tablespoon vegetable oil
1/2 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped green peppers
1 centiliter garlic; minced
12 oz cooked navy; or great =or=-
12 oz great northern beans
2 cup water
16 oz (1 can) chopped tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 bay leaf
1 salt and pepper to taste
2 tablespoon parmesan cheese
Heat oil in large saucepan. Add onions, celery, carrots, green pepper and garlic. cook until tender, about 10 minutes. Add water if necessary to prevent drying. Add beans, water, tomatoes and spices. Reduce heat to low and cook 1 hour. Remove and discard bay leaf. Sprinkle cheese over soup before serving.
