Tuna & Egg Salad


diabetic, eggs, fish, main dish, sandwiches

1 large hard-boiled egg; cooled finely chopped
1 can solid white tuna; in water drained
2 tablespoon low-cal mayo
1/2 teaspoon freshly ground pepper
1 tablespoon chives; fresh minced
1 bibb or boston lettuce
1 medium tomato; diced
1 pita bread

Mix with fork until well blended. Serve tuna-and-egg mixture into pita pocket topped with bitesize pieces of tender bibb or boston lettuce and 1 diced medium tomato.
