Microwaved Baked Potatoes With Salsa

1 large potato; scrubbed
1 topping options:
1/2 cup salsa; * see note
potatoes in a conventional oven at 350 degrees for 1 1/2 hours the night before, and serve them cold for breakfast. Puncture the potatoes several times with a fork and place in the microwave. Cook on high for 7 to 8 minutes, depending on the size of the potato and the number of potatoes cooked, or until tender. Eat plain or with your choice of toppings.
