Pumpernickek

1 cup corn meal; (mixed fine & course)
1 cup rye
1 cup whole wheat
3 teaspoon bran
1 1/2 teaspoon salt
1 1/8 cup water
3 tablespoon molasses; honey; or sugar
1 1/2 tablespoon dry milk; or dry buttermilk
1 1/2 teaspoon brotgewurtz; (a german mixture of anis
1 1/2 teaspoon yeast
1 1/2 tablespoon olive oil
1 tablespoon instant coffee
1 tablespoon cocoa
This gives a dark bread; fairly moist, with lots of texture.
