Lime Chicken Shish Kabob

2 chicken breasts; cut in
cubes
2 limes; juice of
20 milliliters garlic; minced
1 tablespoon low sodium soy sauce
1 tablespoon apple juice concentrate
8 ounces medium mushrooms
1 red bell pepper; cut in 1"
cubes
16 white pearl onions
1 green bell pepper; cut in 1"

2 small zucchini; cubed
Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally.
Alternate chicken and vegetables on skewers.
Grill or broil about 10 minutes, turning and basting with marinade.
