Pineapple Relish

1/2 cup medium-diced fresh pineapple
1/4 cup thinly-sliced red onion
1/2 jalapeno; minced
1 1/2 teaspoons coarsely-chopped cilantro
1 tablespoon rice wine vinegar
salt; to taste
freshly-ground black pepper; to taste
Place the pineapple, onion, jalapeno, cilantro, lime juice, and vinegar in a mixing bowl and mix well with a plastic spatula. Season to taste with salt and pepper.
This recipe yields about 2 1/2 cups of relish.
