Baked Chicken Breasts With Cheese


low-fat, poultry, casseroles

----QUICK & DELICIOUS CASSEROLE----
4 chicken breasts
4 slice swiss cheese
11 oz cream of celery soup
1/4 cup sherry
1/2 cup croutons, seasoned
2 tablespoon butter

Preheat oven to 350. Arrange chicken in greased shallow baking dish; put cheese slices over chicken. Mix soup with sherry; pour over cheese. Sprinkle with croutons; dot with butter. Bake 1 hour, or until tender. Sylvia's comments: GREAT recipe! I used shredded cheddar instead of sliced Swiss, and Special Request cream of mushroom instead of cream of celery. And I threw in a can of mushrooms. I didn't use the croutons or butter at all. I suspected an hour was WAY too long; after 30 minutes, they were just barely done, tender and juicy. It tasted good with hot cooked rice.
