Banana Pudding
dessert, low-fat
3 cup skim milk
3/4 cup tapioca granulated
1/2 cup maple syrup
1/2 teaspoon vanilla extract
1 graham crackers for crust
1 bananas
1 cinnamon
Place milk, in double boiler, heat until almost boiling. Add tapioca, maple syrup, vanilla extract. Whisk for 3 minutes. or until thick. Remove from heat, let pudding cool in fridge for 15 minutes. To assemble, place graham crackers broken in large pieces on the bottom of custard dish or red wine glass, then cover with banana slices. Sprinkle with cinnamon and slowly add pudding on top, Store banana pudding in fridge for one hour. Garnish with lite cool whip.
