Egyptian-style White Bean Salad
beans, low-fat, salad
2 cup white canneloni beans
1 (canned or homecooked)
1 rib celery, diced
4 scallions, trimmed and
1 sliced thin
3 roma tomatoes, seeded and
1 diced
1/2 cup chopped fresh parsley or
1 cilantro
1 juice of 1 lemon
1 teaspoon ground cumin
1 garlic clove, crushed
1 salt and pepper to taste
Mix gently and chill. This is good as a salad or as a sandwich filling.
