Lemon-poppyseed Muffins/ Low-fat

1 3/4 cup all purpose flour
1/3 cup plus 2 t sugar
1 tablespoon plus 2 t poppyseeds
2 teaspoon baking powder
1/4 teaspoon salt
1 cup skim milk
3 tablespoon vegetable oil
1 tablespoon grated lemon rind
1 tablespoon fresh lemon juice
1 egg; slightly beaten
1 vegetable cooking spray
Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine milk and next 4 ingredients Stir well. Add to dry ingredients, stirring just until moistened. Divide batter evenly amoung 12 muffin cups coated w/cooking spray. Bake at 400 degrees for 25 min. or until golden brown. Remove from pan immediately & cool on wire rack. Yield: 1 dozen.
