Low Fat Semolina/golden 86 Whole Wheat Bread

1 1/2 cup water
1 1/4 teaspoon salt
1 teaspoon sugar
1 cup semolina flour
3 cup freshly milled(if possible)
1 golden 86 whole wheat flour
1 (if you have it; if not,
1 any fine quality white
1 winter wheat whole flour
1 will do)
2 teaspoon yeast (not rapid rise)
1 teaspoon butter extract
1 sesame seeds

Place wet ingred. into bread machine, then the dry (put yeast in last!). Do not mix yet. Be certain the yeast does not come in contact with anything wet. Set the bread machine (I used a Zojurishi) to White Bread, and Medium crust. Then allow the bread to go through all cycles except the baking. Ten minutes before the final rising in the machine is complete, shut the machine off. Punch the dough down, form it into a loaf, and place it into a well-oiled bread pan. Cut a slit down the middle, brush with water, then sprinkle sesame seeds over top. Let rise, covered, in a warm place for 40 minutes, preheating the oven to 375 in the meantime. Bake for 45-50 minutes or until tapping it produces a hollow sound. Remove from pan and cool on a rack. Uploaded 7-17-94 by Meriam Matthews.
