Lowfat Apple Dessert With "creamy" Topping
apples, dessert, low-fat
6 granny smith or any other
1 cooking apple
1 (don't use delicious apples)
1/2 cup raisins
1 teaspoon butter extract, rum butter
1 extract, caramel extract, or
1 any combination of the above
1/3 cup sugar
1 zest (finely chopped) and
1 juice of one lemon
1/4 cup water
----TOPPING----
2/3 cup fat free sour cream
1/4 cup evaporated skim milk
1 teaspoon vanilla
1/2 cup confectioner's sugar
2 oz toasted, chopped filbert
1 (hazelnuts) - toast them in
1 a toaster-oven
Peel and core the apple then dice them. Put them in a pot with the next 5 ingredients, cover and boil on med. heat 10 minutes, NO MORE. Don't overcook. Chill.
Except for the nuts, combine the rest of the ingred. in a small dish and whip together till well blended. Pour over top of chilled apples then sprinkle the nuts over top. Delicious and almost guilt-free. Leave the nuts off for an fat-free dessert.
