Marinated Mushrooms


appetizer, low-cal, low-fat

2 pint fresh mushrooms
1 each onion,sliced & seperated
1 tablespoon sugar
2 tablespoon water
1 dash pepper
2/3 cup tarragon vinegar
1 each clove garlic
1/2 teaspoon lite salt or less or none
2 tablespoon canola oil
1 dash cayenne

Remove stems of mushrooms. Wash and pour boiling water over mushroom crowns. Stir for 2-3 minutes. Drain and marinate in remaining ingredients overnight. When ready to serve, drain most of the marinade off and place mushrooms and onions in a shallow serving dish. Serve with wooden picks for spearing.
