Oatmeal Cookies, Low-fat

1 cup flour, all-purpose
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon, ground
1/4 teaspoon cloves, ground
2 tablespoon vegetable oil
1/4 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
1/4 cup egg substitute
1 teaspoon vanilla extract
1 1/3 cup rolled oats; (not 'quick')
1/2 cup raisins
1 cup walnuts; chopped (optional)

Preheat oven to 375 F. Lightly spray cookie sheet with cooking spray. In a large bowl, mix flour, baking powder, baking soda and salt thoroughly. In a separate bowl, whisk together oil, applesauce, sugars, egg substitute and vanilla. Add flour mixture to applesauce mixture. Mix well. Fold in oats and then reaisins and (optional) nuts. Drop rounded teaspoonfuls onto cookie sheet, 2 inches apart. Bake for 10 to 12 minutes. Remove from oven and cool on cookie sheet for 5 minutes. Remove and finish cooling on a rack. Adapted from a Mott's AppleSauce promo by Linda Shogren Linda's Notes: Yes the optional nuts will add some fat to this recipe, but they pack a lot of nutrition in relation to their fat content and add greatly to the tastiness of the cookies.
