1/4 cup water
1/4 cup heavy cream
1 Dash salt
Melt butter in the top of a double boiler over hot (not boiling )water. Add egg yolks one at the time, beating with a rotary beater. Combine cream, salt and water, and add a little at the time, beating constantly. Continue beating until thick and creamy (4 or 5 minutes).
