Cheese Ball / Chicken-cheese Ball, Fried

2 large egg white
1 cup Parmesan cheese; grated
cayenne pepper; to taste

Cheese Balls Whip egg whites until still peaks form. Blend and fold in cheese and pepper carefully. Shape into small balls and deep fry. Finely grated 'pizza cheese' from a package works well. You can also put them in spoonfuls on baking paper in a hot oven instead of deep frying. Chicken-Cheese Balls Chop a piece of cooked chicken into 12 small chunks. Whip 2 egg whites until stiff. Add 1-2 cups of shredded white cheese until the mixture is able to be formed into balls. Form a ball around a chunk of chicken. Deep fry the ball until brown.
