1/4 cup egg substitute
2 large egg white
1/4 cup cottage cheese
1-1/2 tbs avocado; mashed
2 tbs salsa

COTTAGE CHEESE OMELET 3 Complete Blocks (3P; 3C; 3F) Non stick omelet pan, sprayed w/canola oil Scramble egg substitute and egg whites together-- Cook omelet fashion, after the eggs have set and have been turned once, add cottage cheese and fold. Lower heat to help the cottage cheese get warm. Mash the avocado and spread over the top of the ready to serve omelet, then top with 2 Tbs Salsa., serve with sliced peach (or favorite fruit) and a corn tortilla. MMMMM Salsa ( you can use any type you like, but I make my own.) 4 Ripe Tomatoes 6 Cups Boiling Water 2 Tbs Finely chopped onion 1 Tbs Chopped Cilantro 1-2 Jalapeno Peppers 1-2 Tsp Olive Oil 1 tsp Salt 1/4 tsp Oregano (optional or to taste) Place Tomatoes in boiling water for about 2-3 minutes or until skin cracks. Peel tomatoes. Chop 2 of them into small chunks. Place the other two in a blender. Saute jalapenos in olive oil until skin looks like it can be peeled off. Seed and place in blender and Blend. Add remaining ingredients. (Use caution with the jalapenos--two mayt be too many--if it is too spicy add more tomatoes.) I like to use this salsa on just about anything.
