4 large egg; separated
1/2 teaspoon cream of tartar
1/4 cup cottage cheese
2 1/2 tablespoons soy flour; SPI?
1/4 teaspoon salt
1 packet Splenda; or other sugar sub
1 dash (.2 g) cayenne pepper; optional
----- Sausage Gravy: -----
1/2 pound bulk sausage; breakfast
1 cup cream, heavy
1/2 cup water; if needed
1 dash salt and pepper; to taste

For Biscuits: Preheat oven to 300f. Spray an 8x8x2 small cake pan with cooking spray. Beat egg whites until frothy then add cream of tartar and beat until stiff peaks form. In a different bowl, mix the remaining ingredients well, then fold into the beaten whites. Pour into pan and smooth top and bake for approx 40 minutes or until lightly browned and springs back when touched. Watch carefully after 25 minutes - it does vary a lot. For Gravy: While bread is baking, crumble sausage into a saucepan and brown/cook all the way through. Add seasonings and cream. Bring to a boil to thicken. If it gets too thick, add some water as needed. Serve over "biscuits".
