3 medium onion; thinly sliced
2 tbs olive oil, extra virgin
1 1/2 cup sour cream
1/4 cup parsley, fresh; chopped
2 tbs mint; chopped
salt; to taste
Toss the onions with olive oil. Grill the onions on a grill or under a broiler, tossing frequently, until well-browned and tender, about 10 minutes. Combine the onions with the sour cream, parsley, mint, and salt to taste. Let stand for at least 30 minutes before serving to allow the flavors to develop.
