1 large onion; chopped
1 tbs oil
1 pkg (10 oz) spinach; frozen
5 large egg
12 oz Muenster; shredded
1/4 tsp salt
1 dash pepper

Thaw and press spinach dry. Preheat oven to 350. Saute onion in oil in large skillet until tender. Add spinach and cook until excess moisture evaporates; cool. Combine eggs, cheese, salt, and pepper; stir into spinach mixture. Pour into greased 9" pie plate. Bake 30 minutes, until set.
