Quiche, Chicken, Creamy Lc-7/s

1/2 cup butter
1/2 lb mushrooms; sliced
2 cup chicken; cooked, diced
5 medium scallion; chopped
3 large egg
1 tsp salt
1 1/2 cup cream, heavy
1 cup Swiss cheese; grated

Spray mini-muffin cups with non-stick spray. Saute mushrooms in butter. Add chicken and scallion. Saute five minutes. Spoon 1 heaping tsp full of chicken/green onion mixture into each mini-muffin cup. Blend eggs, salt and cream together. Pour into mini-muffin cups, filling them half full. Sprinkle cheese over top of egg mixture. Bake 35 to 45 minutes at 350 degrees.
