Meatloaf, Turkey W/pesto & Spinach - Atkins

1 lb ground turkey
1 pkg (10 oz) spinach, frozen; thawed
1/2 cup bread crumbs; atkins
1 large egg; beaten
3 tbs pesto, prepared
1/4 cup cream, heavy
1 clove garlic; pushed through a press
1 tsp oregano, dried
1/2 tsp salt
1/4 tsp pepper
For a delicious twist on the traditional meatloaf, try this turkey version. Prepared pesto and oregano add lots of flavor.
1. Heat oven to 375°F. In a large bowl, combine turkey and spinach until well blended. Mix in remaining ingredients.
2. Transfer mixture to a loaf pan. Bake 45-50 minutes, until an instant read thermometer inserted in center registers 160°F. Cool 5 minutes before cutting into slices.
