Apple Walnut Bread Pudding

4 slices bread; white, firm
2 teaspoons margarine; melted
2 medium apples; chopped
1/4 cup walnuts; chopped
2 cups milk, 2% lowfat
1/2 cup egg substitute, frozen; thawed
1 teaspoon vanilla
1 package vanilla pudding mix; sugar-free
1 teaspoon cinnamon; divided

Heat oven to 350°. Lightly brush bread with margarine; cut into 1/2" cubes. Place on cookie sheet. Bake 10 minutes or until lightly toasted. Place cubes in shallow 1 - 1/2 quart baking dish. Add apples and walnuts; toss lightly. Pour milk, egg substitute and vanilla into mixer bowl. Beat with a wire whisk until well blended. Add pudding mix and 1/2 teaspoon cinnamon. Whisk until blended. Pour over bread mixture; sprinkle with remaining cinnamon. Bake 30 minutes. Remove from oven; let stand 10 minutes before serving. (Per serving: 225 calories; 6.6 g fat; 1.8 g saturated fat)
