Low-fat Black Beans And Rice


beans

2 teaspoons olive oil
1 cup chopped onion
1/2 cup chopped green pepper
2 cups cooked long grain rice
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
1/8 teaspoon dried coriander
1 15-oz can black beans
3/4 cup chopped tomatoes

Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender. Stir in rice and next 3 ingredients. Saute 3 minutes. Add beans and tomatoes, cook 3 more minutes.
