Pecan-amaretto Macaroons
cookies, low-fat/low-cal
4 egg whites; room temperature
3/4 cup sugar
3/4 cup oat bran; unprocessed
2/3 cup pecans; toasted, chopped
1 tablespoon amaretto
1/2 teaspoon almond extract
Preheat oven to 300 degrees; coat two cookie sheets with nonstick cooking spray. Beat egg whites in a large bowl at high speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold in oat bran, pecans, amaretto and almond extract. Drop batter by tablespoonfuls onto prepared pans. Bake for 25 minutes, or until golden and firm. Remove from pan and cool on wire racks. Store tightly covered. (per cookie: 36 calories, 1.5g fat, 38% calories from fat)
