Mustard/wine Marinated Lamb Chops

4 sirloin lamb chops 1 thick
1 teaspoon salt
3 tablespoon stone ground mustard
1/4 teaspoon pepper
1 cup red wine
Rub both sides of chops with mustard. Sprinkle with salt and pepper. Cover with wine and marinate overnight in refrigerator. Rub again with mustard just before broiling or pan-frying to desired doneness.
