Old Fashioned Vegetable Beef Soup

----STOCK----
3 beef shanks; cross cut
8 cup water
4 teaspoon salt
1/2 teaspoon oregano; dried
1/4 teaspoon marjoram; dried
5 each whole black peppercorns
2 each bay leaves

1 10 oz. corn; frozen 3 ea tomatoes; peeled and cut up 2 ea potatoes; medium, cubed 1 c green beans, fresh; or : -frozen 2 ea carrots; cubed 2 celery; chopped 1 ea onion; medium, sliced Combine all stock ingredients and bring to a boil. Cover, reduce heat to low, and simmer for 2 hours. Remove beef; when cool enough to handle, cut off meat and coarsley chop. Discard bones, strain broth, and skim excess fat. Return broth to kettle and add all remaining ingredients plus chopped meat. Bring back to a boil, cover, reduce heat to low, and simmer for an hour longer.
