Quiche Lorraine Ala Katherine
cheese/eggs, main dish
1 9 quiche pastry
6 slice cooked bacon; crumbled
1 1/4 cup swiss cheese; grated
1/4 cup parmesan cheese; grated
3 eggs; beaten
1 1/2 cup half-and-half
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup onion; chopped
1 tablespoon rendered bacon fat; use drippings from cookin
SAute onion until tender. Place bacon, onion and cheeses in pie shell. Blend together eggs, cream, salt and pepper. Pour over mixture in quiche shell. Bake at 375øF. for 45 minutes, or until mixture is firm and light brown.
