Country Sausage


entrees, pork

1 1/2 lb lean trimmed pork
10 oz pork fat
1 teaspoon black pepper
1 handful snipped chives
1 pinch cayenne
1 tablespoon parsley, minced
1/2 teaspoon marjoram, crushed
1/4 teaspoon coriander, ground
1/2 teaspoon summer savory, crushed
1/4 teaspoon nutmeg

Grind meat and fat together finely. Mix all ingredients, along with a few drops of warm water. Form patties and wrap, then freeze. From Marie Campbell
