Robb's Cinnamon Chicken
chicken, marinade, poultry
1/4 cup oil
1/4 cup orange juice
1/3 cup honey
2 teaspoon coarse-grained mustard
2 teaspoon cinnamon
2 garlic cloves, crushed
1 tablespoon fresh lemon juice
1 salt & pepper, to taste
2 chicken breast halves
1 skinned and boned
Combine all ingredients in blender container. Blend until thoroughly emulsified. Pour marinade over chicken and marinate, covered, for 6 hours or overnight, turning occasionally.
Preheat broiler and cook, about 3 inches from heat, turning once, until done to your taste, 20 to 30 minutes.
Variation: Substitute juice of 1 lime for orange and lemon juice.
