Arborio Rice Salad

1 teaspoon dijon mustard
1 teaspoon salt
2 teaspoon red wine vinegar
6 tablespoon olive oil
1 cup arborio rice
8 cup water
1 tablespoon salt
1/2 cup swiss cheese -- diced
1/4 cup black olives -- diced
1/4 cup green olives -- diced
1/4 cup green peppers -- diced
Whisk together first 4 ingredients and set aside. Boil rice in water and salt for 10-12 minutes. Drain and rinse well. Toss with dressing and remaining ingredients. Rest at room temperature for awhile before serving.
