Lemon Mustard Dressing

4 tablespoon lemon juice
1 garlic clove; crushed
2 teaspoon sugar
2 teaspoon dijon mustard
100 ml olive or sunflower oil
1 salt and pepper

Put the lemon juice into a bowl and stir in the garlic, sugar and mustard. Gradually stir in the oil until it begins to thicken and carry on stirring until the dressing amalgamates.
