Les' Cottage Cheese Garden Salad

24 oz cottage cheese, small curd
1 stalk celery, diced
1/2 carrot, grated
1/2 green bell pepper, seeded, diced
4 scallions, diced
1 plum tomato, seeded, diced
1 salt and pepper, to taste
Mix all ingredients together. Refrigerate for 1 to 2 hours. (Overnight is best. Serve on a bed of fresh spinach or lettuce. Garnish with chopped or whole scallions.
