Black Bean & Orzo Salad


low-fat, pasta, salads, side dish

3 1/2 cup orzo, cooked
1 cup red bell pepper, chopped
1/2 cup purple onion, chopped
1/2 cup parsley, chopped
1/4 cup basil, chopped
15 oz black beans, cooked
1/4 cup red wine vinegar
3 tablespoon water
2 tablespoon balsamic vinegar
1 tablespoon olive oil
1 1/2 teaspoon sugar
1 teaspoon pepper
3/4 teaspoon salt
2 each garlic cloves, minced

Combine orzo, pepper, onion, parsley, basil and beans; set aside. Combine vinegar, water, balsamic vinegar, olive oil, sugar, pepper, salt and garlic; mix well and toss with salad. "Cooking Light" Shared by Carolyn Shaw 1/96
