Chili Sauce #1

24 large tomatoes -- peeled and
1 chopped
3 large red peppers -- seeded and
1 chopped
4 large green peppers -- seeded and
1 chopped
2 hot peppers -- seeded and
1 chopped
1 cup sugar
3 cup cider vinegar
2 tablespoon salt
4 large onions
2 cloves garlic
1 teaspoon ground cloves
2 teaspoon ginger
1 1/2 teaspoon cinnamon
1 1/2 teaspoon pepper
Combine all the ingredients except the spices in a large kettle and bring to a boil. Reduce heat and simmer for 2 hours. Add the spices and continue cooking for 15 minutes. Check the seasoning and texture and cook longer if it needs thickening. Pour into hot sterilized jars and seal.
