Bechamel Sauce - Microwave

2 tablespoon unsalted butter
2 tablespoon all-purpose flour
1 pinch salt
1 dash tabasco sauce
1 cup half and half
----GARNISH----
1 fresh chives, chopped
Microwave butter in a medium microwave safe bowl, covered with plastic wrap, on high power until butter is melted, about 1 minute. Stir in flour, salt and Tabasco sauce until smooth. Gradually pour in Half and Half, whisking until smooth. Microwave, covered with plastic wrap, on high for 2 minutes. Whisk until smooth. Microwave for 2 minutes longer. Serve warm. Garnish with chopped chives. Makes 1-1/4 cups. 114 calories per 1/4 cup. From: Syd's Cookbook.
