Poached Salmon With Horseradish Sauce
fish, low-fat, main dish
4 cup water
1 lemon, sliced
1 carrot, sliced
1 stalk celery, sliced
1 teaspoon peppercorns
4 4 oz salmon steaks
----HORSERADISH SAUCE----
1/4 cup reduced cal mayonnaise
1/4 cup plain non-fat yogurt
2 teaspoon horseradish
1 1/2 teaspoon lemon juice
1 1/2 teaspoon chopped chives
Combine first 5 ingredients in a large skillet; bring to a boil over medium-high heat. Cover, reduce heat and simmer 10 minutes. Add salmon steaks; cover and simmer 10 minutes. Remove skillet from heat; let stand 8 minutes. Remove salmon steaks to serving plate; serve with Horseradish Sauce.
