Chou Rouge Au Vin Rouge

4 oz salt pork,diced
2 tablespoon flour
1 medium head red cabbage
1/2 cup chopped onion
1/2 cup dry red wine
1/8 teaspoon ground pepper
Heat oven to 350'. Cook and stir salt pork in Dutch oven over medium heat until crisp; add onion. Cook and stir until onion is tender. Stir in flour. Remove from heat. Coarsely shred cabbage. Stir in remaining ingredients. Cover and bake until cabbage is tender, about 1 hour. Season with salt if desired.
