Minted Rice
side dish
1/2 cup long grain white rice
1/2 medium cucumber; diced
1/4 cup fresh mint; chopped
1/2 cup nonfat plain yogurt
1 salt
1 black pepper
Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix cucumber, mint, and yogurt in a serving bowl. Drain rice; add to bowl. Add salt and pepper, to taste. Toss well.
